The knishes sound really good. I would probably cook the potatoes in the microwave - they only take about 6 minutes per potato.

My friend (a vegetarian) made the best sweet potato casserole - it was really delicious - had apples, almonds, cranberries in it as well as other good "stuff".

I actually did not overeat too badly at the dinner but overdid it on the leftovers yesterday! LOL.

I'm still overeating.

People brought pies, tortes, cakes, fudge...in addition to the desserts I made. So no matter how many leftovers I handed out, my refrigerator still contains the bulk of them.

'Bulk' will be an operative word for many months ahead.

Yumm..the knish sounds amazing (and complicated.) Is that a dough wrap around the taters?

I had planned to make stuffing and mashed potatoes, but we ended up doing no cooking at all. Maybe next year. :)
Cooking potatoes in the microwave is such a good idea! I didn't think of it. Thanks a bunch! I will not put any potato in the oven for 4 hours any more, not in the next 10 years if I can help it. :)
Same here! We have been overeating 1 week before the Thanksgiving, and now that Christmas is practically here in the air... I just need to read more of your proses to help the digestion.
Knishes are great. You should really try it. I think I put a little too much stuffing in the dough. It's supposed to be a sort of flat pocket of potatoes wrapped in relatively thin dough. My knishes looked more like calzones. I'm sure you can make better-looking knishes. :)
