As a vegan, I don't miss cheese stuff much, probably because I've never been really into cheese or had cheese too often. But if you can't live without cheese, this baked mac and cashew cheese is for you. This tasted so very close to the "real" mac and cheese that you won't want to buy extra cheese afterwards. I used three different types of pasta: kamut elbows, whole wheat elbows and whole wheat fusili.
